Okay so I am mostly the defender type in bedwars; here are my tips and ways of defending for different situations, hope you find it helpful!
(note: this applies mostly to the quadruples gamemode)

Anti TNT:
If you do not want your opponents to tnt their way to your bed, here is the ideal bed defense you need. In total, you need 64 and 16 iron and 8 gold. With your gold, you need to buy 32 wood planks/logs and with your iron, you shall buy 8 clay pieces, 64 wool and 32 sandstone. The first layer is going to be used for clay, because it is going to prevent your bed from getting exposed. The second layer is going to be your wood planks, the third layer is going to be your sandstone. Finally, you finish it all up with a layer of wool!

In a hurry:
If you are in a hurry, and want a simple yet efficient defense, here it is. In total, you need 32 iron and 4 gold. With your 32 iron, you shall buy 12 endstone and 32 pieces of wool, and with your 4 gold, you need to buy 16 wood planks/logs. For the first layer, you need endstone, and it must be placed down in this pattern --> https://gyazo.com/9cd0e028443d0e3b8a4ceb62f1fbc922

Lastly, you need to cover them all up with your 32 wool.

Lastly, the "tank":
As the title implies, this is going to be a BIG and THICK defense (note: it is better to obtain resources by getting the gold forge upgrade)
In total, you would need around 4 and a half stacks of iron (64, 64, 64, 64, 32), 4 gold and 10 emeralds. For your first layer, you need to buy 8 obsidian pieces with your 8 emeralds, and 2 water buckets. The second layer is going to consist of 16 wood planks/logs. The third layer is going to consist of your blastproof clay, 32 to be exact. Your fourth layer is going to consist of 48 endstone. Finally, your last layer should be around 64 sandstone and 16 pieces. With your 2 water buckets, you can go ahead and build up 16 blocks above your bed defense, and place 2 buckets accordingly above the 2 top blocks, and that's how It's done my way

if you play solo, 2 layers are enough. But if you play like duos, or trios, then i'll recommend the antitnt, or water bed defense.

The best bed defense in my opinion is the non existent bed defense. It's very useful and helps me lose 9 out of the 10 games I play!
