what is the recommended version to play SBD on?

The most popular versions of Minecraft SBD players are playing at ar 1.8, 1.8.9, 1.8.8 and 1.12.2. Grinding works slightly better at 1.12.2 (around 5% performance incerase comparing to 1.8), so I recommend Minecraft version 1.12.2 for this.
