what happens to your crop hoe when it levels up? I would like the answer for both of the special hoes

If not mistaken u have chances to boost your money (gold crop hoe)

There is +4 different Crop Hoes all of them are unique, for example the golden crop hoe by upgrading it you can boost you chance of getting ×2.5, etc...
