On what is based the amount of coins and xp you get at the end of every minigame? (Take for example the bridge: how can you increase the amount of coins and xp earned per game?)

You can't increase the number of coins you get per game unless you buy a rank on the Store, which increases your coin multiplier but for no ranks, you will just get the same amounts of coins per game.
