Well, the best way to regen health mid battle is: Healer kit. But there are free for all alternatives:
Use a regeneration potion and an apple. Maybe you are in teams, without a teammate and in trouble, 2v1. So you back off a few blocks, throwing a regen pot and start eating a gap, so you get some health meanwhile you are just eating, and important, if you aren't close to the void JUMP, that way if someone hits you while eating you'll get more knockback, meaning he cant hit you twice while gapping.
Next time you are in a 2v1 remember, there are still chances of winning, even if they have the upperhand!
